Blue Velvet Whoopie Pies #Frozen2

 

In “Frozen 2,” the answer to why Elsa was born with magical powers is calling her and threatening her kingdom. Together with Anna, Kristoff, Olaf and Sven, she sets out on a dangerous but remarkable journey. In “Frozen,” Elsa feared her powers were too much for the world. In the highly anticipated sequel, she must hope they are enough. 

In honor of the film, why not try a cool, blue treat that will make even Sven dance with you!

Blue Velvet Whoopie Pies
  • 1 box Signature Blue Velvet Cake Mix or if the Blue Velvet mixes are not in your area you can use a white cake mix and add blue food coloring
  • 1/2 cup all-purpose flour, sifted
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 1/3 cup water

Filling:
1 stick of butter
2-3 cups powdered sugar
vanilla


Baking Instructions
  • Preheat oven to 350°F.
  • Line a cookie sheet with parchment paper.
  • Combine cake mix, flour, eggs, vegetable oil and water in a large bowl. Mix until thoroughly blended.
  • Use a teaspoon and scoop batter onto cookie sheet. Put no more than 12-15 per sheet, as the batter will spread.
  • Bake 10 minutes. Let cool completely and set aside.
Beat together butter with one cup of powdered sugar.  Continue to add sugar till you get the flavor/consistency you desire.   I added a dash of vanilla as well.  Spread 1 teaspoon of frosting on the flat sides of half of the  whoopie pies and top with remaining pies.   If you do not want to make a filling, then pick up a jar of Duncan Hines instead!
