Healthy Baking Challenge with @CarringtonFarms & @tfal_cookware #sprinkleofnutrition #Recipes #ad #GIVEAWAY

Recently I was asked to participate in a “Healthy Baking Challenge,” a celebration of homemade, guilt-free, fresh-baked goods in recognition of National Nutrition Month (March) hosted by healthy food brand, Carrington Farms, and T-fal bakeware.

When it comes to baking, it’s hard not to think of all that sugar, flour, and butter. But—the Healthy Baking Challenge allowed to  re-approach baking with recipes that can be simplified,  nutritious and delicious.

In order to get my baking on, I had the help from the following products:

 So here are a couple of recipes I came up with to feature products from Carrington Farms and T-Fal.   Baking doesn't have to be complex.  It can be simple and have a few ingredients!
Chocolate Peanut Butter Chia Cookies!

Ingredients
  • 1 cup smooth peanut butter
  • 1 tbsp cocoa powder
  • 1 tbsp Carrington Farms Flax Chia Seeds
  • 1 large egg
  • optional: 1 tbsp honey or 1 tbsp maple syrup
Instructions

  1. Preheat the oven to 350F.  If you are not using a T-fal AirBake Natural Sheet,  line a cookie sheet with parchment paper.
  2. Add all the ingredients to a bowl and mix well.
  3. Roll the cookie dough into approximately 12 walnut sized balls and place on the cookie sheet. Flatten with a fork and bake for 10 minutes or until the edges are just starting to crisp.
  4. Remove from the oven and allow the cookies to cool.
  5. Enjoy
Chocolate Chai Mug Cake

Ingredients:
  • ¼ cup all-purpose flour
  • ¼ tsp. Carrington Farms Flax Chia Seeds
  • 2 tbsp. unsweetened cocoa powder
  • ¼ tsp. baking powder
  • 2 tbsp. granulated sugar
  • ¼ cup + 1 tbsp. milk
  • 2 tbsp. Carrington Farms Unflavored Liquid Coconut Cooking Oil
Instructions:
  1. In a medium bowl, whisk together dry ingredients.
  2. Slowly add in  the milk and Carrington Farms Unflavored Liquid Coconut Cooking Oil.  Mix until all ingredients are combined and batter has no clumps.
  3. Pour batter into a microwave-safe mug. I used a larger mug to make sure it would not over flow.  
  4. Microwave mug cake for 70 seconds on high
  5. Carefully remove from microwave and enjoy!  Top with whipped topping, chocolate syrup, etc.
