Fruit Pizza #Recipe

Please note, you can have the cookies already baked ahead of time, but do not add frosting or assemble until right before your event. If you make way ahead of time cookies will get soggy

Ingredients:

Cookie Base
1 package of Betty Crocker Cookie mix and make according to package

Frosting
1 brick Cream cheese
1/2 cup sugar
2 tsp of Vanilla

Fruit (increase/decrease fruit based on preference)
Kiwi (1-2)  - Cut into slices and then in half
Strawberries (1 lb container) -  cut into thin slices
Blueberries  (1 pint container)  - just rinse and pat dry
Mandarin oranges (10 oz can drained and pat dry)

Instructions
  •  Lightly spray pizza pan.  Pre-heat oven to temperature on package.
  • Bake large cookie in a pizza pan, if package does not have directions for large cookie mine baked for 10-12 minutes.   Don't over cook.  
  • Cool 10 minutes or until completely cooled.
  • In a bowl mix cream cheese, sugar and vanilla
  • Spread each cooled cookie with cream cheese mixture. Arrange fruit on top of each. Serve immediately, or cover and refrigerate up to 2 hours
Cost Break Down (items purchased week of 01/26/13 at Meijers):
Blueberries - $2
Strawberries - $1.25 x 2  = $2.50
Kiwi- $.40 each x 2 =$.80
Can on oranges -$.89
cream cheese - $1.25
Cookie mix - $1.99
Total cost = $8.54

Mix leftover fruit for a fruit salad!  I bought 2 containers of strawberries, so I would have enough to make fruit salad.    Prices vary by location, but not bad for an entire fruit pizza and then left over fruit for fruit salad!  Yummy Yummy!!!
