Preparing Meals Ahead of Time #GLADMomMade

Last week I was in NYC for  BlogHer 2012 and it was fun, busy and crazy all at the same time!

I was selected to participate in the GLAD Meal Kit program, and Glad sent me a package to help me prepare a meal in advance to freeze for my family whilst I was busy at BlogHer.  I was excited to receive a GLAD Mom Made meal kit to feed my family for a night while I am away, it is hard enough being away from the kids, at least I did not have to worry about what they would be eating.  I adapted the recipe and was able to throw it together and freeze it for my family to enjoy while I am gone.  Even my little picky eater was in love with the meal!

I received 2 Glad FreezerWare Containers, a recipe card for Chiptole Chicken enchiladas (which I adapted to make Tex-Mex Lasagne), tortillas, diced chilis, and enchilada sauce.

 Below is the  Chiptole Chicken Enchiladas Recipe:
Ingredients:
  • 1 tbsp olive oil
  • can (4.5 oz) diced chilies
  • 1 rotisserie chicken, picked of meat
  • 1 tbsp chipotle chili powder
  • 1 tsp chili powder
  • 1  jar (16 oz) of salsa
  • 1 can (28 oz) enchilada sauce
  • 12 corn tortillas
  • 1 cup shredded cheese
  • 1 onion, diced (optional)
Directions:
  1. Preheat oven to 350°.
  2. Heat oil over medium-high heat in a large skillet. And onions (if desired) and garlic and saute until soft. Around 3 minutes. Add chilies, chicken, chili powders and salsa and stir in skillet to combine. Simmer about 5 minutes. Remove pan from heat to assemble enchiladas.
  3. Soften tortillas in microwave for about 30 seconds on high.
  4. Coat bottom of a casserole pan with some enchilada sauce. Place rest of sauce in a shallow pie pan. Dip tortilla into remaining sauce and then fill with some o of the chicken mixture. Roll tortilla and place seamside down in dish. Repeat until remaining tortillas are stuffed and rolled.
  5. Pour remaining sauce over tortillas and sprinkle with cheese.
  6. Back for 20 minutes until fully cooked through and cheese has melted.
Transfer enchiladas to Glad Freezerware for freezing for later. Serves 4-6 people.

My variation is below:
Tex-Mex Lasagne Recipe:

Ingredients:
  • 1 tbsp olive oil
  • can (4.5 oz) diced chilies
  • 1 lb of hamburger meat cooked and drained
  • 1  can (16 oz) of re-fried beans
  • 1 can (28 oz) enchilada sauce
  • 12 corn tortillas
  • 1 cup shredded cheese
  • 1 onion, diced (optional)
Directions:
  1. Preheat oven to 350°.
  2. Heat oil over medium-high heat in a large skillet. And onions (if desired) and garlic and saute until soft. Around 3 minutes. Add chilies, hamburger meat, chili powders and salsa and stir in skillet to combine. Simmer about 5 minutes. Remove pan from heat to assemble enchiladas.
  3. Soften tortillas in microwave for about 30 seconds on high.
  4. Coat bottom of a casserole pan with some enchilada sauce.  Layer tortilla, re-fried beans, hamburger meat, onions/chilils, cheese and a little bit of enchilada sauce.  Repeat and make another layer.
  5. Pour remaining sauce over tortillas and sprinkle with cheese.
  6. Back for 20 minutes until fully cooked through and cheese has melted.
Transfer to Glad Freezerware for freezing for later. Serves 4-6 people.
