Rolo Cupcakes


Due to budget cuts a number of great employees at my job were laid off.   Well tomorrow in the office we are celebrating a co-worker who was laid off.  I am the go to dessert gal, so I opted to make the dessert.   There are tons of Rolo cupcake recipes out there, but this is my budget friendly one!

Ingredients:
  • 1 bag of Rolos unwrapped (I purchase mine after the holidays and freeze)  I counted out 48 for the cupcakes (24 inside, 24 on top) and then used the remaining to drizzle.
  • 1 chocolate cake mix (oil, eggs, water)
  • 1 can of Butter cream frosting
Make cake mix according  package and spoon into cupcake liners just like normal.  Press one Rolo in each cupcake and then bake according to box.   When you remove them from the over, you will notice a divot from the Rolo sinking, don't worry the frosting will cover  it.  Frost cupcakes to your liking.   I then heated the remaining handful of Rolos on low heat, constantly stirring until melted.  I quickly drizzled on the top of each cupcake.  I had to place the pan on the warm burner a couple times to get it to melted again between drizzles.   Then top each on with a Rolo!

When you bite in side you will be treated with ooey gooey caramel!

Cost breakdown:
Butter cream frosting can:  $1.65
Cake Mix $1.09  (oil,eggs, water had on hand)
Rolos:  $1.50 for a bag (I buy Rolos and Hershey Kisses on clearance after Holidays and freeze)
Liners:  $.62
Cost to make 24 cupcake: $4.86  = $.20 a cupcake
