Apple Muffins

I made these today and they are too yummy!!! I had to share! I did tweak the original recipe a little bit as you will see below.   I also increased the bake time and doubled the recipe when I made mine

Apple Muffins
Adapted from The Girl Who Ate Everything

  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup oil
  • 1 Tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 3 cups peeled, cored, diced apples (around 3 small apples)
  • 1/4 cup. brown sugar mixed with 2 Tablespoons cinnamon (reserve for topping)

  • Preheat oven to 350 F.
  • In a large bowl cream together the sugar and eggs. Add the oil and vanilla. In separate bowl mix all the dry ingredients.
  • Add dry ingredients to creamed mixture. The batter will be very thick. Add the diced apples.
Fill muffin tin with liners tins and fill liners to the top. Sprinkle with brown sugar, about 1/2 tsp. brown sugar per muffin.

Bake for 25-30 minutes. Makes 20-24 muffins.
