Splenda with Fiber, Granulated review and giveaway

With graduations, Father's Day and summer get together coming up now is the time to get cooking and baking! What better way to celebrate and give the gift of a sweet treat with reduced calories from sugar, and the added bonus of a boost of fiber!

It is no secret, I have a sweet tooth for baked goods and I love baking. If you can not find me online, them I am in the kitchen baking! I am always looking for healthier alternatives to my favorite treats and new recipes to try out on the family.

Recently, Splenda introduced a new product - Splenda with Fiber, Granulated. It measures cup for cup like sugar and has a gram of fiber in each teaspoon. It allows me cut down on the calories when baking and add a strong fiber kick to our favorite treats. A tablespoon of granulated Splenda with Fiber has the same 3 grams of fiber that you get from half a cup of oat bran.

Below are a sample of some of the sweet treats that you can use with Splenda with Fiber, Granulated!

White Chocolate Cranberry Cookies

  • ½ cup butter
  • ⅓ cup SPLENDA® Sugar Blend
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups old-fashioned rolled oats
  • 1¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ⅔ cup white chocolate chunks or chips
  • ¾ cup dried, sweetened cranberries
  1. PREHEAT oven to 375 °F. Lightly oil 2 cookie sheets. Set aside.
  2. MIX butter and SPLENDA® Sugar Blend together until light and creamy in a medium size mixing bowl. Add eggs and vanilla. Mix until well blended. In a separate bowl, stir together oats, flour, baking soda and salt. Add to egg mixture. Stir until well blended. Mix in chocolate and cranberries.
  3. DROP tablespoon size pieces of dough onto cookie sheet.
  4. BAKE for 8-10 minutes or until lightly golden brown.


Serving Size: 1 cookie

My favorite dessert of all time, although I am the only one in the family who enjoys carrot cake!
Classic Carrot Cake
A great classic dessert!

  • ⅞ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • 2 large egg whites
  • ¼ cup eggbeaters
  • ⅜ cup SPLENDA® No Calorie Sweetener, Granulated
  • 3 tablespoons reduced fat margarine
  • ½ cup honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsweetened applesauce
  • 3 tablespoons canola oil
  • 2¼ cups finely shredded carrot
  • ⅓ cup walnuts
  • butter flavored cooking spray
  1. Preheat oven to 350 degrees F. In medium bowl whisk together flour, baking powder, baking soda, salt, cinnamon, and allspice. Set aside.
  2. In small bowl whisk together egg whites and eggbeaters. Set aside.
  3. In large bowl beat SPLENDA® Granulated Sweetener, margarine, honey, vanilla, applesauce, and canola oil. Mix in egg mixture, stir until well mixed. Stir in flour mixture, then carrots and walnuts.
  4. Pour into greased 8 cup loaf pan and bake for 40-45 minutes, or until toothpick inserted comes out clean. Allow to cool, ice if desired.
