Cheesy Hasselback Potatoes #recipe

Ok I admit it, I had never heard of Hasselback potatoes until they were showing up in my Facebook feed.  So with Easter on the mind, I figured I would actually attempt these amazing looking potatoes showing up in my feed!  These were perfect with the ham!

Hasselback Potato are basically a potato that is sliced thinly and baked until the outside edges get nice and crispy, kind of like french fries, and the inside is as tender as a baked potato!You then add what you want to make it your way.  I went with cheesy potatoes, but you can make them loaded, just butter, etc.

Scrub your potatoes and then, using a sharp knife, make slices across the potato, make sure to stop before you reach its bottom. Place a wooden spoon at the base of the potato to help prevent cutting all the way through.
Slice the butter thinly. The colder the butter, the easier it is to cut and hove in the potato. I recommend not taking it out of the fridge until you are ready to cut it!

Next do the same with the block of cheddar cheese!

Open the potatoes slices and shove the cheddar and butter, alternating between the two. I placed on a baking sheet with a silicone liner (makes for easy clean-up) and season with salt and pepper. Then drizzle a little olive oil on top of the potatoes .

After they’re stuffed, you want to bake them at 400ºF for about 45 minutes to an hour. Towards the end, sprinkle with the shredded cheddar cheese!

Ingredients
  • 4 small baking potatoes
  • one stick of butter, sliced thinly
  • salt and pepper to taste
  • 1 block of cheddar cheese, sliced thinly 
  • 1 cup cheddar, shredded
  • olive oil
Directions
  • Slice the potatoes thinly  without cutting all the way through.
  • Place the potatoes on a baking sheet, stuff the sliced butter and cheese in between a few of the cuts in the potatoes, season with salt and pepper, then drizzle with  olive oil.
  • Bake in a preheated 400F oven until crispy on the top and tender in the middle, about 1 hour.
  • Sprinkle the potatoes with the shredded cheese and return to the oven until the cheese has melted.
